Tanzanian Crepes with mango syrup

This is good for breakfast or dessert.
Chapati maji serves many Tanzanian homes every morning. There are many variations of chapati maji, and many people like to use eggs. I do not use eggs, sugar, or salt in this recipe because the syrup is very sweet. So please do not add sugar or salt or egg in this recipe. My chapatis are about 5 inches in diameter. I normally use half of this recipe to get about 3 to 4 chapatis.

Shira ya embe (Mango syrup)
Prepare the mango syrup first before chapati. When you are waiting for mango syrup to cool down, prepare chapati.


Ingredients
  • 4 cups chopped ripe mango (very ripe and sweet mango)
  • ½ cup Sugar
  • ½ tsp Cardamon (Ground)
  • Take 2 cups of chopped mangos put them in a blender. Add sugar and cardamom then blend. Don’t blend to a smooth liquid.
  • Pour the mixture to a cooking pot.
  • On medium heat, let the mixture boil. Stir every few minutes; because sugar can easily stick on a pot or even burn. Let it boil for 5 minutes.
  • Add the remaining 2 cups of chopped mangos, cover the pot; lower the heat to low. Let it boil for two minutes.
  • Remove it from the pot, to a serving bowl and let it cool a little bit.

While Mango syrup is cooling, start to prepare chapati maji.

 
Chapati maji (Tanzanian crepes)
Ingredients
  • 1 cup all purpose flour
  • 1½ cup water
  1. Mix water and flour in a bowl. Mix well until is very smooth.
  2. Heat a non stick pan on a medium heat and brush a little bit of oil using any clean cloth or paper towel.After the first turn
  3. Pour the mixture in the pan enough for a very thin chapati. Once the top look translucent, check to see if the bottom of chapati is golden brown. If it is, turn it over. If you are using a non stick pan you will not need to add oil to the pan at this moment, but if you are using a regular pan, you may need to add a ½ tsp of oil at the bottom of the pan.

  5. Check to see if, the bottom of chapati has golden brown circles. If yes remove from the pan and place it on a plate that you will use to serve.

 

Final Preparations
1. Take about two spoons or more of mango syrup put on a chapati.
2. Put one side of chapatti over the syrup.  
3. Then do the same with the other.
4. Then turn the chapatti over the other side to hide the fold.
5. Put some syrup on the rolled chapati, just like the top (main) picture.  
Serve with:
  • breakfast or after dinner as dessert.
