Githeri (Kenyan recipe)

This is a Kikuyu recipe from Kenya. It is one of the recipes our maid used to prepare for us many times. Traditional ingredients are fresh maize and beans only. Nowadays Githeri can be mixed with anything. Our maid liked to mix with collard greens, known as sukuma wiki in Kenya. The mixture of maize/corn, beans and greens brings a very good taste. The only thing you need to add at your table is meat and your meal is ready.

Ingredients

  1. In a pan, mix oil, Collard greens, and onions. Sautee in medium heat.
  2. When the greens are almost cooked, add Maize, beans and salt.
  3. Lower the heat to medium-low, cover and simmer until all cooked well.
  4. Remove and serve while still hot.
