Irio and fried onions

Githeri is a Kikuyu recipe from Nairobi, Kenya. You can see the influence of the British in this recipe. The British colonized Kenya for a long time and they introduced a few of their habits to Kenyans one of them is drinking tea, and the famous githeri. Githeri is mashed potatoes mixed with variety of vegetables, fresh white corn/ maize and meat. I ate a variety of githeri in Kenya; some add meat, Sukuma wiki (Collard greens), peas, carrots and the works. It is very simple and easy to prepare. I can say this was the first recipe I learned to prepare while in Kenya.
I have added my own touch; example the fried onions and Cilantro is not part of the Kikuyu Githeri, but you will find it goes well together. If you visit Nairobi, make sure you eat Githeri.
Githeri

Ingredients
  • 250g Potatoes
  • ¾ cup Fresh corn (preferred fresh white maize)
  • ½ cup peas
  • ¼ cup green onions
  • ½ cup Chopped carrots (almost same size as)
  • Peas
  • 1 tbsp Chopped cilantro
  • Butter
  • Salt
  1. Boil Potatoes, peas, corn, carrots separately, do not forget salt
  2. In a Big bowl mash the potatoes.
  3. In a small pot, use butter to sauté green onions and cilantro for one minute
  4. Add the cooked green onions and all other ingredients, plus 1 tablespoon of butter in mashed potatoes, mix well.
  5. Serve worm and add on top Fried onions.

Serve with:
•Your favorite baked meat or fish.
