Chai ya Viungo (Chai)

In Kiswahili, Chai is a generic word for tea. So in Tanzania, chai
can be plain tea, herb tea or tea with milk. "Chai ya Viungo" is
spiced tea; This is the Chai that is consumed in the Western world.
I prefer to make chai with whole spices, because it taste just like the spiced tea I was used too in Tanzania.
 

Ingredients
  • 6-----cardamon Seeds (make an opening on every seed)
  • 3-----cinnamon sticks (about 3 cm long each)
  • 4-----cloves (whole)
  • 4 to 6 fresh ginger slices. (about 1/4 cm thin and 2 cm square)
  • 1 cup--Milk
  • ½ cup---water
  • 1 regular tea bags
  • Place all ingredients, except tea bags, in a pot and add water. If using skim or 2% milk, replace water with milk.
  • Bring it to boil and lower the temperature immediately (to avoid overflowing) and let it continue to boil for 4 minutes or until the tea is infused by the spices. Finally, add tea bags, boil for a minute and serve. Enjoy!!

Second option: Instead of using whole spices, use ½ tsp or more of tea masala. Boil the milk or water with ground spices for 1 minute only.
